摘要

Pickering乳液是由固体颗粒吸附在水油界面上形成的乳液体系,具有较好的包埋、保护和递送香料香精的潜力,从而有利于防止多种不利因素对香料香精使用性能的影响。固体颗粒的润湿性、表面电荷及尺寸等多种因素都会影响Pickering乳液的形成与稳定,通过对Pickering乳液微观结构的观察可进一步了解这些因素的作用机制。因此,该文主要介绍了Pickering乳液的形成、微观结构表征及常用于包埋香料香精的固体颗粒,以期为推动香料香精Pickering乳液的制备与应用提供理论参考。

Abstract

Pickering emulsion is an emulsion system formed by the adsorption of solid particles on the water-oil interface. It has better potential to encapsulate, protect and deliver flavor and fragrance, thereby preventing the influence of various adverse factors on the performance of flavor and fragrance. Various factors such as the wettability, surface charge, and size of the solid particles will affect the formation and stability of Pickering emulsions, and the mechanism of these factors could be further understood by observing the microstructure of Pickering emulsions. Therefore, this article summarized the formation and microstructure characterization of Pickering emulsions and the solid particles commonly used to encapsulate flavor and fragrance, to provide a theoretical reference for promoting the preparation and application of Pickering emulsions of flavor and fragrance.
