不同厚度聚乙烯包装对花椒嫩芽冷藏品质和抗氧化酶活力的影响

Effects of polyethylene packaging with different thickness on quality and antioxidant enzyme activities of Zanthoxylum buds during cold storage

摘要

为筛选能够延长花椒嫩芽冷藏期的适宜包装,该文以“大红袍”花椒嫩芽为材料,采用厚度0.02、0.03、0.05 mm的聚乙烯(polyethylene, PE,PE20、PE30、PE50)袋包装后于4 ℃冷藏,研究其冷藏期间感官品质、脱落率、失重率、含水率、可溶性蛋白质、H2O2和总酚含量、超氧阴离子自由基(·O-2)生成率和抗氧化酶活力的变化。结果表明,PE20和PE50包装花椒嫩芽冷藏24 d时叶片脱落率分别为8.79%和15.08%,PE30包装则避免了花椒嫩芽冷藏期间的脱落现象,显著维持了其感官品质和含水率,抑制了可溶性蛋白质和总酚含量的下降以及多酚氧化酶活力的上升,提升了超氧化物歧化酶、过氧化氢酶和过氧化物酶的活力,减少了·O-2和H2O2的积累,从而延缓了花椒嫩芽的衰老进程。综上,PE30包装能够有效提升花椒嫩芽4 ℃冷藏期间的品质。

Abstract

To select the suitable packaging for extending the cold storage period of Zanthoxylum buds, Dahongpao Zanthoxylum buds packed in 0.02 mm-, 0.03 mm-, and 0.05 mm-thickness polyethylene bags (PE20, PE30, and PE50) and were stored at 4 ℃, then the sensory quality, abscission rate, weight loss rate, contents of water, soluble protein, H2O2, and total phenol, superoxide anion radical (·O-2) production rate, and antioxidant enzyme activity were assayed during cold storage.Results showed that the leaf abscission rate of Zanthoxylum buds packed with PE20 and PE50 was 8.79% and 15.08% on 24 days, respectively.PE30 packaging significantly maintained the sensory quality and the water content of Zanthoxylum buds, inhibited the decrease of soluble protein and total phenol content and the increase of polyphenol oxidase activity, improved the activities of superoxide dismutase, catalase, and peroxidase, and reduced the accumulation of ·O-2 and H2O2, thus delaying the ageing process of Zanthoxylum buds during cold storage.In conclusion, PE30 packaging can effectively maintain the quality of Zanthoxylum buds during storage at 4 ℃.
