摘要

黄酒历来以营养丰富、保健养生著称,本文综述了近年来研究发现的黄酒功能因子,包括酚类化合物、低聚糖、γ-氨基丁酸、生物活性肽、萜烯类、四甲基吡嗪、多糖、香豆素和木脂素等,指出了今后研究的方向,有助于更加全面地认识黄酒的功能,并为今后深入研究黄酒的功能因子和保健功能提供参考。

Abstract

Huangjiu has always been known for its rich nutrition and healthcare.In this paper, the functional factors of Huangjiu discovered in recent years, including phenolic compounds, oligosaccharides, γ-aminobutyric acid, bioactive peptides, terpenoids, tetramethylpyrazine, polysaccharides, coumarins and lignans, etc., were reviewed, and the direction of future research were pointed out, in order to gain a more comprehensive understanding of the functions of Huangjiu and provide reference for further research on the functional factors and health functions of Huangjiu.
