摘要

我国以白酒为基酒的传统配制酒历史悠久,大多为药酒或功能酒,酒精度通常在30%vol以上,中老年人为主要消费人群。目前配制酒饮品向低度、愉悦、助兴等个性化方向发展,低度配制饮料酒崭露头角,得到年轻消费者的青睐。该文总结了以白酒为基酒的配制酒研究现状及稳定性问题,为以白酒为基酒的配制酒的研究与开发提供一定的参考。

Abstract

The traditional prepared wine based on Baijiu has a long history in China, most of them are medicinal wine or functional wine.Alcohol is usually more than 30% vol, the elderly as the main consumer groups.At present, prepared wine drinks to low-alcohol, pleasure, add to the fun and other personalized direction, low-alcohol prepared drink wine emerging.Get the favor of young consumers.This paper summarized the research status and stability of prepared wine based on Baijiu.To provide a reference for the research and development of prepared wine based on Baijiu.
