摘要

为了解植物基食品的研究现状和发展趋势,采用文献计量学方法,以Web of Science(WOS)为数据库中期刊论文和综述论文为研究对象进行统计分析,为相关学科的研究提供参考。结果显示,植物基食品研究成果呈逐年增长态势,尤其是2017年之后,增长显著。美国及其研究机构在植物基食品研究的文献数量和影响力方面占有绝对优势,虽然中国发文数量仅次于美国,位列第二,但是在机构影响力方面和美国等发达国家还有一定的差距。目前研究植物基食品学科方向主要是食品科学技术和营养学,但同时也展示出多学科交叉融合的发展趋势。植物肉、植物基蛋白质、肠道微生物、食品安全、可持续饮食等方面是该领域的研究前沿。

Abstract

To understand the research status and development trend of plant-based food, the bibliometric method was adopted, and the journal papers and review papers in the database were used as the research objects to provide statistical analysis for the research of related disciplines.Results showed a trend of increasing year by year, especially after 2017.The United States and its research institutions have an absolute advantage in the number and influence of plant-based food research, although China ranks second in the number of publications, there is still a certain gap in the influence of organisations between China′s and other developed countries′ organisations, such as the United States.At present, the research direction of plant-based food is mainly food science technology and nutrition, but it also shows the development trend of multidisciplinary cross-integration.Plant-based meat, plant-based proteins, gut microbes, food safety, sustainable diets, and more are at the forefront of research in this area.
