通过流延法将丁香酚(eugenol, EUG)负载到κ-卡拉胶(κ-carrageenan, KC)基质中,成功研制出KC-EUG薄膜。针对不同EUG含量(5%、10%、15%)对薄膜的形貌、结构、机械性能、阻隔性能以及表面润湿性能产生的影响,展开了系统探究。研究发现,EUG与KC通过氢键相互结合,随着EUG含量增加,薄膜的柔韧性、阻隔性能和疏水性增强。此外,KC-EUG薄膜还具备良好抗氧化活性与抗菌性能,其抗氧化活性和抗菌效率均与EUG含量呈正相关。鉴于EUG具有挥发性,测定了EUG在KC-EUG15薄膜中的封装率,结果显示,EUG实际在KC-EUG15中的封装效率达到了(68.2±1.1)%,封装效果良好。针对KC-EUG15薄膜开展实际应用评价,KC-EUG15薄膜通过直接接触和挥发模式均表现出良好抗菌性,在25 ℃下使牛奶保质期延长近100%。综上,EUG的加入使KC-EUG薄膜的物理性能与功能特性均得到显著优化,在抗菌包装领域展现出巨大的应用潜力。
The κ-carrageenan(KC)-eugenol(EUG) films were successfully fabricated by incorporating EUG into KC matrix via casting.The effects of different EUG contents (5%, 10%, 15%) on the morphology, structure, mechanical properties, barrier properties, and surface wettability of the films were systematically investigated.It was found that EUG and KC were bonded to each other through hydrogen bonding, and the flexibility, barrier properties and hydrophobicity of the films were enhanced with the increase of EUG content.In addition, the KC-EUG films also possessed good antioxidant and antimicrobial activity, which were proportional to the EUG content.Given the volatility of EUG, the encapsulation rate of EUG in the KC-EUG15 film was measured.The results indicated that the actual encapsulation efficiency of EUG in the KC-EUG15 film reached (68.2±1.1)%, demonstrating a favorable encapsulation effect.The practical application evaluation demonstrated that KC-EUG15 film possessed good antimicrobial properties through both direct contact and volatilization modes, and extended the shelf life of milk by nearly 100% at 25 ℃.In conclusion, the addition of EUG significantly optimizes the physical and functional properties of KC-EUG films, showing great potential in the field of antimicrobial packaging.
