摘要

苯并(a)芘[benzo (a) pyrene,BaP],作为多环芳烃(polycyclic aromatic hydrocarbons,PAHs)家族的一员,因其显著的致癌与致突变特性,对人类健康及生态环境构成了不容忽视的威胁,这一问题已在全球范围内引起了广泛重视。在食品领域,尤其是植物油的生产过程中,由于高温加工步骤如焙炒等,使得BaP成为植物油中潜在的高风险污染物。该文概述了植物油中BaP检测技术的最新进展,涵盖免疫学方法ELISA、表面增强拉曼光谱技术、HPLC、GC-MS以及HPLC-MS/MS等。这些研究不仅可以推动检测技术的创新与进步,而且对于确保植物油产品的安全性具有重要的意义。

Abstract

Benzo (a) pyrene (BaP), as one of the polycyclic aromatic hydrocarbons (PAHs), exhibits strong indirect carcinogenicity and mutagenicity, posing a serious threat to human health and the environment.This problem has aroused wide attention in the world.In the field of food, especially in the production of vegetable oils, BaP has become a potentially high-risk pollutant due to high temperature roasting.The latest progress in the detection of BaP in vegetable oils was reviewed, covering immunoassay, surface-enhanced Raman spectroscopy, HPLC, GC-MS, and HPLC-MS/MS.These studies can not only promote the innovation and progress of detection technology, but also have important significance for ensuring the safety of vegetable oil products.
