Abstract

Fungal toxin contamination in grains has always been one of the important factors threatening global food security, and its production is influenced by various biotic and abiotic factors in the field and storage stages. To effectively predict and control fungal toxin contamination, understand the impact of environmental factors on fungal growth and fungal toxin metabolism, and combine fungal toxin molecules with the characteristics of grains, establishing high-precision and high generalization prediction and warning models and developing new detoxification technologies have become hot topics in this field. This article summarizes the influencing factors related to fungal toxin contamination in grains in fields and warehouses, and based on the complexity of the relevant influencing factors, outlines the evolution of field fungal toxin prediction models from traditional regression analysis to machine learning models, as well as the establishment of prediction models based on factors such as temperature and humidity, CO2 concentration, microorganisms, and spectral information in storage. At the same time, the prevention and control strategies of fungal toxins in grains from the field to storage were summarized, and the research progress of new detoxification technologies was briefly described. The development of future prediction models and detoxification technologies was analyzed and forecasted, hoping to provide reference for the development of a green and efficient full industry chain fungal toxin prediction and control system and related research.
